Baking and Benadryl

Ouch... Oh, how my head hurts today. It's that Midwestern weather again. We were in the 40s last night but our high will be nearly 80 today and for the next few days. Then we return to highs in the 60s. Two Migraine Strength Excedrin and two Benadryl have not touched the hurt. I think I'll blame global warming, that's it... sounds as good as anything. :)

Normally I do my baking in the morning but I've let the dishes stack up until the drugs kick in. (Hmmmm... that's what I need, those pain pills I took when I had the tooth extracted!)

Anyhoo, back to reality... I can't stand to do any baking in a messy kitchen so I'll clean it up and make the cranberry bread this afternoon (both recipes on my recipe blog, the pumpkin bread and the cranberry bread, make two loaves).

The Everyday Food Storage blog had a recipe for pumpkin cookies that were chewy. I printed it out... looks great. In the same post, they gave this recipe sent in from a reader...

For quick pumpkin cookies combine one can of pumpkin, a box of any cake mix, an egg, and chocolate chips. Mix well and either make individual cookies or press in a 9 x 13 inch pan and bake.

They didn't give times but I can look that up with similar recipes. I'm going to make a batch of these using a spice cake mix and perhaps baking in a 9 x 13 inch pan. I think I'll use butterscotch or cinnamon chips instead (I can only find cinnamon chips at Target these days). They look like they'll freeze well.

Kelli has a delicious looking apple fritter recipe here, for those who may still have lots of apples to use up. I'm keeping that one for a cold day when I want something quick for the guys.

It has been very good for me to have to eat from the pantry and freezer. Today's main meal was lunch again and I made pizza burger sandwiches and cole slaw. Hubby qualifies for the senior citizen discount at the health food store so I have him purchase just one can of my favorite Eden Organic Pizza Sauce once in awhile on discount day. I used one from the pantry in my recipe today (I also make a wonderful pasta sauce with it by combing one can of the pizza sauce and one can of Italian style tomatoes with a little ground beef or sausage).

I'll leave you with these recipes to check out. I'm working on a post that will have some emergency preparedness and "deepening the pantry" websites and blogs, too. I think I'll have more computer time next week for research and e-mails. :)

I've made cookies with spice cake mix before (no pumpkin) and they were really good. I think I'll try that pumpkin cookie recipe. Thanks for the links - I'm trying to get some different pumpkin recipes (I always make pumpkin bread or cookies) so this is perfect! I have been making a pumpkin custard that you make with splenda and it's really good.

I love coleslaw! It's so easy to make that I make it almost everyday either for lunch or dinner.

Looking forward to the deepening your pantry posts....ran into a man when I was having my car serviced...we were talking about the economy and HE said how he is stocking up on essentials right now....hmmmmm....LOTS of people seem to be on the same page.
