I finally had a chance to take some pictures today. I'll post more as the week goes on but the first post had to be of this yummy looking peach pie I baked this afternoon. Sorry for the dark picture, though. I'd take another one but it is half way gone already. Needless to say, the guys really liked it.
I have two spiral notebooks (one filled, the other just begun) which contain recipes from library books and other such sources. The first notebook was at least half filled during the first semester I took Christopher to his one class at the community college (before he had his driver's license) and I'd wait for him at the library on that campus. Most of the remaining recipes are also from library books checked out and brought home.
This recipe is from a cookbook called Endangered Recipes by Lari Robling. It has been waiting in my spiral notebook, ready to be tried and enjoyed. I'll transfer it to my recipe blog so it will be on file.
Kentucky Peach Pie
1 cup sugar
1 stick butter - room temp
1/3 cup flour
1 Egg
1 1/4 teaspoons vanilla extract
5 large peaches, sliced (about 5 cups)
1 double pie crust (Pillsbury works fine)
cinnamon sugar mix (optional)

Preheat oven to 350 degrees.
Using an electric mixer; combine sugar, room temperature butter, flour, egg, and vanilla until well blended. Fold in peaches until well covered.
Line a 9" pie plate with crust. Pour peaches into crust. Top with second crust and crimp edges. Prick a few holes for vents on top. Sprinkle cinnamon sugar on top if desired.
Bake pie for one hour. Let cool completely to room temperate before serving (this is important so make it way ahead of serving).

I'd forgotten how to make peach pie this way thank you for the wonderful reminder of how to make fresh peach pie.
Oh good! I was just thinking maybe I should make a peach pie for our church picnic Saturday but hadn't found a recipe yet!
