I made these pumpkin cookies yesterday afternoon. My husband gave them a "10 1/2 out of 10". My son just kept saying...yum. They are honestly one of the best cookies I have ever made.
They are from Brenda Hyde's wonderful Old Fashioned Living e-mail newsletter. I've been receiving her newsletters now for many years (and multiple e-mail addresses!).

Here is her recipe.
Pumpkin Cookies
Ingredients:
1 cup shortening
1 cup sugar
1 cup mashed pumpkin
1 egg
2 cups flour
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. salt
1 cup raisins (optional)
Cream shortening , sugar and pumpkin. Add eggs and
mix well.Add sifted dry ingredients and raisins. Drop
from spoon onto greased cookie sheet and bake at
375 degrees F. for 10 to 12 minutes.
Frosting for Pumpkin Cookies
3 Tbsp. butter
4 tsp. milk
1/2 cup brown sugar
1 cup powdered sugar
3/4 tsp. vanilla
Cook butter , milk and brown sugar until dissolved:
Cool and add powdered sugar and vanilla . Spread
on warm cookies. Yield 4- 5 dozen.

Thank you! This looks like a recipe I used to use and somehow lost a few years ago. I like to put a bit of maple flavoring in the icing - makes it a bit more special.

I think chocolate chips would be great (especially mini choc. chips...yum). I'll also try the maple flavoring in the icing. I expect that will add a great deal of flavor. I like the icing so much on these cookies, I'm going to double it and use it on pumpkin muffins.
I'd have to say Crunchy Cons is a new favorite. I liked it so much, I created a class for my son in Current Events (we'll do Russian Literature next semester instead).
